Vineyards
Passion is our drive. Sustainability our focus. We are dedicated to the quality of our fruit which in turn becomes the essence of our wine. We consider ourselves at Prism Cellars extremely fortunate to be a stones throw away from so many growers, producers, winemakers, and farmers all of whom continue to raise the bar for cool climate viticulture in New York.
At Prism Cellars our wines are created from a minimal philosophy. We find vineyards that are abandoned or in disarray. We tend to the vines and then harvest the fruit. We also work with organic and sustainable growers to support this small but growing community. We like to create a Pied de Cuve from ambient yeasts, fruit and flowers for all of our fermentations. We add as little as possible, if anything to our wines. As for fining or filtering we simply allow gravity, time, vibration, and pressure to settle our ferments and use taste to tell us when they are, in our opinion ready for bottling.
